This is a super simple recipe given to me by a friend several years ago. I love crock pot recipes that turn out great (because I've made my share that don't). This one is a nice change from the usual Red Beans and Sausage I like to make. It uses can black-eyed peas, but I'm sure you could use dry beans by just soaking them overnight before putting them in the crock pot.
Add all of the following into a crock pot:
1 chopped onion
1 chopped bell pepper
1 can (MILD) Rotel or diced tomatoes
1 can beef broth
3 cans black-eyed peas
1 lb. of sausage (sliced)
Cook on low for 6 hours. Serve over rice. So easy!!!
***Note-Sometimes I find even MILD Rotel to be too spicy for kids. Substitute diced tomatoes if you'd like.
